handmade in a style developed at the cheesery at Red Hill, each wheel
encapsulates the essence of 16 litres of free-range goat milk, transformed
over 2-3 months maturation into a flavour and aroma experience that
delights the senses. Moist and delicate, with a natural rind and deep-blue
veins, a striking contrast to the porcelain-white body. The mouthfeel is
velvet with pronounced floral flavours.
