from Ron & Bev Smith’s contented cows at Fish Creek in Gippsland.
The flavour is mild with a pleasant, earthy smokiness.
The texture homogeneous and buttery, and the rind dusty orange.

A great after-dinner cheese, served with seasonal fruit.
